Hot chicken is a must in Nashville. The juicy meat is marinated, sprinkled with flour and fried. But the last few steps are what sets it apart from other fried chicken.

Before serving, a cayenne pepper sauce is added to the hot chicken and then placed neatly between a slice of white bread and pickled fries. Depending on your request, the sauce can vary from mild to sweet-jeez-this-spicy. Add black-eyed peas, baked beans, fries, or pimento mac and cheese and you’re good to go.
